questions on deer jerky making?
i want a easy recipe
i have to use a dehydrator so dont give me instructions for smokers or ovens
will it be safe to eat cause i heard it has to at 160 degrees to get rid of all bacteria and i dont think my dehydrator gets that hot (it was a cheapy nesco dehydrator)
is it better to use my jerky gun or to slice it?
Originally jerky was made in the sun with a little air flow. 160 degrees is a good temperature.
It is more the air flow from the warm air than the heat that makes the jerky.
I use a dehydrator also. The jerky gun is good if you need it more tender. I just slice mine real thin about 1/4″ X 1/4″ strips or less, that’s how it was originally done.
Very simple recipe:
1 cup soy sauce
5 tea spoons liquid smoke
1 tea spoons salt
2 table spoons brown sugar
Just add these ingredients together and pour over the top of your meat. Let soak for 1-2 hours in the refrigerator. Then place it on the dehydrator evenly spaced apart.
That is a very simple recipe and the base for all the jerky I make. Your imagination is the limit on the flavor of your jerky. Add ANY spice or season that you like. Sometimes I add hot sauce, garlic, or red pepper.
The above recipe is very delicious and it very hard to only eat one piece. You will find yourself and family continually return for more.
